In a statement posted on Instagram, Booton says that he is leaving the five-star Mayfair hotel to begin a new chapter in his career.
“When I was brought on board, the mission was to put The Grill at The Dorchester back on the map – and looking back, what we’ve achieved together is nothing short of impressive and something I am massively proud of,” the statement reads.“
I’m forever grateful to everyone at the Dorchester Collection for believing in me and for the many once-in-a-lifetime opportunities I’ve had the privilege to experience.”
The hotel confirmed Botton’s upcoming departure and said that The Grill had “gone from strength to strength” under his leadership.
“It has been a pleasure working with Tom, his passion and drive have left a lasting impact on The Grill,” says The Dorchester general manager Luca Virgilio.
The hotel says that further details regarding the future concept for The Grill will be announced in due course.
Booton joined the restaurant – then called The Grill at The Dorchester – in 2019 aged 26, becoming the youngest chef ever to lead the restaurant.
Shortly afterwards – in 2021 – he was named chef to watch at Restaurant’s National Restaurant Awards.
2023 saw the restaurant relaunch as The Grill by Tom Booton with a new look and sharing menu.
Originally from Essex, Booton has been cooking since he was 15 at venues including Le Talbooth in Essex, L’Autre Pied and Dabbous.
Prior to joining The Grill at The Dorchester, Booton was head chef at the Michelin-starred Alyn Williams at The Westbury.
Booton will remain at the Park Lane hotel until August.
