Welburn, who was previously chef-patron at Cygnet at the Swan Inn in Oxfordshire, will lead Fern restaurant in the mid-Cornish village of Nanstallon as its executive chef.
The restaurant is due to open in the autumn.
Revealing the news on a social media post, he writes: “So the cat is out the bag. Pleased to announce I will be beginning the journey of opening Fern, a new restaurant in Nanstallon, as Exec Chef.
“Looking forward to building a team and launching this venture in the autumn and bringing my food to Cornwall.”
Welburn says the site will evolve as the team builds and that he is in the process of finding the right team members. More information on the restaurant will be released soon
Welburn’s CV includes spending more than six years at Gary Rhodes’ restaurant Rhodes W1 where he was head chef and almost two years as head chef at The Leconfield restaurant in Petworth. He was also executive chef at The Oxford Kitchen for nearly five years, where he won it a Michelin star.
In 2022 Yorkshire-born Welburn helped Nina Gray and Nicole Patrick launch the Cygnet restaurant. He announced late last year that he was leaving the venue and relocating to Cornwall to find his next venture.
