Stripped back smash burger brand Chuck’s is making a permanent return to London.

The brand is setting up shop at Carousel’s adjoining cocktail bar No.23 in Fitzrovia following a series of pop-ups.

Opening in September, Chuck’s at No. 23 will serve simple smash burgers and fries, with the brand known for its ‘no modifications’ policy and ‘no faff’ approach. The burger will comprise a crisp patty, cheddar, pickles, white onion and Chuck’s signature house sauce in a soft potato roll.

More menu items, including fish Sauce wings and a crispy chicken burger will be introduced later down the line.

Chuck’s was launched in Milan in 2022 by Newport Rhode Island-born Chuck George. The brand has since expanded to Paris and Rome and most recently Madrid, and there are future expansion plans for London and Amsterdam this year.

“If you told me there’d be a Chuck’s in London three years ago, I wouldn’t have believed you but here we are,” he says.

“I’m thrilled to be joining Ed and Ollie as co-inspirators in a permanent Chuck’s set within the townhouse walls of No23. Burgers and fries are coming this September.”

Of the opening, Ed Templeton, co-founder of Carousel says: “Chuck instantly became part of the Carousel family when he first popped up with us last summer. We’re beyond happy that he’s joining us full time, and No. 23 really is the perfect fit. Who doesn’t want a peerless smashburger with their spicy marg?”
