It will be the group’s largest restaurant to date, spread across two floors with a rooftop terrace overlooking the city.
The ground floor will house a casual dining space and bar for around 30 covers, with its own cocktail menu and open kitchen, while the upstairs dining room will seat 50, plus a further 15 on the terrace.
The site has been vacant since Jamie Oliver’s restaurant group collapsed in 2019.
Interiors will feature Root’s trademark palette of greens and earthy tones, offset by wood, plants and new artworks by designer Will Freeman.
Part of Josh and Holly Eggleton’s Pony Restaurant Group, Root is led by co-patrons Rob Howell and Meg Oakley-Howell.
Its first site opened in Bristol’s Cargo development in 2017, followed by a restaurant in the Somerset city of Wells in 2022. Both hold Michelin Bib Gourmands
Known for putting vegetables centre stage, Root champions local and seasonal produce, with sustainably sourced meat and fish in supporting roles.
Menus celebrate whole-plant cooking with inventive dishes such as celeriac pastrami, leek mayonnaise and house-made focaccia.
The Bath menu will showcase the team’s approach to root-to-tip cooking with a menu that includes braised leeks with pumpkin seed romesco; smoked beetroot with apple and walnut butter; borlotti beans with saffron and winter tomatoes; and ewe’s curd dumplings with brown butter.
Given second billing to Roots vegetable-based dishes, meat and fish containing dishes include smoked chicken breast with honey mustard slaw; whole grilled Cornish plaice with warm tartare; and ox heart skewers with burnt onion purée.
Root Bath is expected to launch on 15 October.
