What was your first industry job?

Peeling onions and garlic.

If you weren’t in kitchens, what would you do?

I would be in the bar drinking cocktails and wine.

What industry figure do you most admire, and why?

Gordon Ramsay. He’s a chef who became a successful businessman.

What’s your pet hate in the kitchen?

Lazy people.

What’s the oddest thing a customer has said to you?

Nothing. All my customers have been good to me.
