Noble Inns to open Bistro Sablé on its former The Smokehouse site

Noble Inns is transforming the site of its The Smokehouse restaurant into a new French bistro.

The group, which operates venues including Pig & Butcher in Islington and The Princess of Shoreditch, will open Bistro Sablé on Islington’s Canonbury Road early next month, which it says will be an evolution for the neighbourhood location.

The 65-seater restaurant will be spread across two areas, with a bar space to the front of the building where a handful of tables and chairs, and bar stools will create a space for drinking. To the rear will be the dining area with an open kitchen.

An affordable and succinct menu will cover French classics, with a traditional Sunday lunch also offered. The wine list, curated by former Mere sommelier Alex Froslet, will offer the large majority of wines in 75ml, 125ml, carafe and bottle formats.

The interior will be ‘unashamedly Bistro chic’ with white washed walls and tables clad in white tablecloths framed with bistro-style chairs and intermixed with banquette seating. Design touches will include sketches, pictures and cartoons as well as polished copper pans and an original ‘Boucherie’ sign bought during multiple trips to the flea markets of Paris.

Smokehouse Islington opened its doors in August 2013.
