Opening in London’s Hanover Square, Mazarine, is the latest project from Khaled Dandachi and Fred Srouchi, the restaurateurs behind Mayfair Italian restaurant Sparrow.
Mazarine will serve coastal French cuisine with fish and seafood the focal point of the restaurant. The restaurant is described as ‘atmospheric, gastronomic, convivial, and always elegant’ and will have a raw bar as part of its design.
Laborde’s menu will bring classic Riviera dishes to Mayfair, including smoked eel croquette; salade niçoise; octopus béarnaise; raviole of Cornish crab with lobster broth and citronelle; le grand aïoli Marseillais (salt cod, sea urchin, langoustines, seasonal vegetables); coquelet with piment d’espelette; and aged beef fillet with truffle sauce.
Laborde’s career spans a number of Michelin-starred French restaurants. He trained under Alain Ducasse at his Monaco three-Michelin-star Le Louis XV and was
head chef at Le Gavroche alongside Michel Roux before the age of 30. He later went on to earn his own Michelin star at L’Oranger in 2003 before helping launch multiple restaurants across London including La Petite Maison.
He was also part of London’s ‘bistronomy movement with opening Chabrot Bistro d’Amis in Knightsbride and was most behind casual yet refined bistro Les Platanes, which opened in Mayfair in 2019.
Dandachi and Srouchi opened Sparrow in 2022 and plan to launch a number of high-end restaurants in the capital.
“Mazarine, in all things, aims to epitomize the virtues of timeless refinement, technical perfection, and peerless hospitality in every gesture,” says Dandachi.
“At Mazarine, we believe in dining over eating, elegance over opulence, ritual over routine, and guests, above all else.”
The launch of Mazarine follows that of ambitious seafood restaurant Lilibet’s, which opened in Mayfair last month.
