Hughes is well known in the area, having represented Wales on Great British Menu.
His CV includes a stint at Gordon Ramsay Group’s Savoy Grill. More recently, he has held head chef roles at Blue Waters in Antigua and Château Rhianfa in Anglesey.
To coincide with Hughes’ arrival, the restaurant - situated on the North Wales seaside resort’s promenade - has unveiled a “sophisticated new seasonal menu that delivers exquisite flavour compositions.”
Dishes will include ex-dairy beef tartare with kimchi and soy-cured egg yolk; baked hand-dived scallop; seven-spice roast duck breast; and rosemary-infused chocolate crémeux with hazelnut ice cream.
“The Goat is all about celebrating what’s right here on our doorstep,” Hughes says. “We’ve got incredible seafood, meat, and vegetables in North Wales, and I just want to give those ingredients the respect they deserve — cooking modern Welsh food with a few classic touches.”
Razvan Tauleanu, The Goat’s general manager, added: “We’re thrilled to welcome our new head chef, Jason. He brings a wealth of experience, and I’m sure our diners will relish his and his team’s culinary creations.”
