El Siete will replace Mezcaleria Colmillo, which has DJ decks and space for dancing.
The new concept, which translates as ‘The Seven’, takes its name from El Colmillo, the nightclub El Pastor co-founders Sam Hart and Crispin Somerville operated in Mexico City in the 1990s (seven is the sum of its former address 52 Versalles Street).
The drinks programme will be “firmly rooted in agave culture”, drawing on Hart and Somerville’s experience of Mexican palenques, cantinas, and both neighbourhood and destination bars.
The bar will serve “best-in-class” margaritas, original agave-based cocktails and “exceptional versions of classics”. A wide selection of sipping mezcales and tequilas will be available from the back bar.
A short menu of snacks will include mini tostadas made with El Pastor’s house-made heirloom corn tortillas, as well as the group’s chile popcorn.
Accessed via a discreet entrance on Brewer Street, guests will descend a staircase into a low-lit, neon-inflected lounge designed by Macaulay Sinclair. The 60-cover space will feature a central horseshoe bar with low-slung banquettes and couches arranged around glass-topped cocktail tables.
Hart and Somerville opened the first El Pastor in Borough Market in 2016 and now operate sites in King’s Cross, Soho and Battersea.
The brand will open its first regional site, in Manchester, next year.
Harts Group also operates Barrafina, Parrillan, Quo Vadis, Bar Daskal and The Drop.
El Siete is expected to launch in March.
