Anthony Demetre takes additional space within the Sofitel London St James

Anthony Demetre will open a new private dining space within the Sofitel London St James later this month.

The Hive by Wild Honey is being billed as a continuation of the chef’s Michelin-starred restaurant, Wild Honey St James, which is also located within the Pall Mall-based London hotel.

Opening this December, the new space seats 20 guests and “marks the next evolution for Demetre while continuing his commitment to ingredient-driven cooking”.

Created by designer Jim Hamilton, the room is anchored by a central table topped with hexagonal motifs referencing the building’s former history as the headquarters of Lloyds Bank, whose original 1765 emblem featured a beehive.

A mix of artwork adorns the walls, including a bespoke piece by artist Eleanor Carlingford, while books line the shelves and a small lounge provides space for pre-dinner drinks.

True to its name, The Hive by Wild Honey will make use of honey harvested from the hotel’s rooftop beehives.

Dishes will include Isle of Orkney hand-dived scallop with white vermouth, XO sauce and sea herb salad; Scottish hare ‘Royale’; and grilled rare-breed sirloin with Pommes Anna, salsify and bordelaise sauce.

“The Hive by Wild Honey represents many of the things I love about hospitality: warmth, generosity and a connection to nature,” Demetre says. “I wanted to create a space that has the spirit of Wild Honey St James but with its own identity and on a more personal level.”

Demetre joined the Accor-run Pall Mall hotel in 2019, shortly after the closure of the original Wild Honey site in Mayfair.
