Edinburgh’s Lyla to become restaurant with rooms as Stuart Ralston pushes for two stars

Stuart Ralston has acquired the upper floors of the Georgian townhouse that houses his Michelin-starred Lyla, adding four bedrooms and a 12-cover private dining room.

When Lyla launched in 2023, the rooms were operated by Katie O’Brien under the 21212 brand.

Lyla attracted a Michelin star earlier this year, less than 12 months after it opened, and it is hoped that the changes to the Royal Terrace restaurant, alongside Ralston’s ongoing refinement of the dining experience, will strengthen the case for a second.

The bedrooms are currently being refurbished by Glasgow-based interior architects Scarinish Studio and are expected to launch in February.

According to the restaurant, the rooms will reflect Lyla’s “Scottish leanings and calm nature”, allowing the natural structure of the townhouse to come through.

Design details include detailed cornicing, large sash windows, light-washed oak chevron flooring, soft neutral-toned bouclé upholstery, rich velvet and marble integrated into bespoke joinery.

The rooms will be integrated into the Lyla experience, with guests greeted with an aperitif, charcuterie and snacks before being shown upstairs.

Each room will feature minibars stocked with Lyla’s own batched cocktails, Champagne and caviar, as well as shelves filled with the restaurant’s own products.

Launching in April, the private dining room will centre on a sculptural solid oak table.

“This next chapter means we can give guests the fullest expression of Lyla,” Ralston says. “The expansion of Lyla allows for another layer to offer our guests; this experience is something I have always wanted us to move towards, and is also us moving into a pursuit of a second star, an opportunity to refine every detail and push ourselves further.”

Ralston opened Parisian bar à vin Vivien and cocktail bar Vinette in October.

His exclusively Edinburgh-based Aizle hospitality group – which he runs alongside Jade Johnston – also includes two Bib Gourmand restaurants, Noto and Tipo.
