As revealed earlier this year, the pair have acquired The Wellington in Margate Old Town.
Set to launch later this week, the venture will serve classic pub dishes with a French influence and a strong focus on supporting local farmers, growers and producers.
An inn and coaching house, The Duke of Wellington, opened at 1 Duke Street in 1849 and has gone through many incarnations since, most recently as bistro Dukes.
The pub section of The Wellington will serve draught beers including Meteor, Guinness and local guest IPAs on rotation; Kentish and Breton ciders; tap wines; and a selection of non-alcoholic drinks including 0% beers and homemade cordials.
Anglo-French snacks to enjoy in the pub will include Duck sausage roll, brown sauce; Welsh rarebit; chips with hollandaise; and carottes râpées.
In the dining room, the menu will offer a selection of pub and brasserie classics, drawing on the produce of Kent.
Starters will include cep cream vol-au-vent; country-style terrine, cornichons and mustard; and crab meat on toast with bisque.
Main courses will include Longland Farm roast duck, duck-neck sausage, liver parfait and duck fat fried bread.
There’ll also be pies for two, including chicken, leek and girolle; and beef cheek and snail suet pudding.

Margate is home, we love the town and the community, so it’s an honour to be the new custodians of this historic site, taking it back to its roots as a public house. Whether you’re stopping by for a pint or a glass of wine with a Scotch egg, or joining us for a full meal, we want it to be a good time!”
Topham, Stock’s partner in life and business, was general manager at Ribbe’s previous Margate restaurant Barletta, and most recently worked at Updown Farmhouse. Her CV also includes London’s Grind, Soho House and Kym’s, the now closed sister restaurant to Andrew Wong’s A Wong.
The Wellington opens on Friday 5 December.
