Tony Parkin to launch debut solo restaurant project next year

Chef Tony Parkin is set to launch his first solo restaurant project early next year, in a location yet to be revealed.

DAISE by Tony Parkin is described as a small, intimate space in which Parkin will man the stoves, while his wife Laura will “take care of the more important stuff”.

The name appears to be a reference to the word ‘dais’, meaning raised platform or stage, which perhaps hints at an elevated open kitchen.

Parkin has attracted Michelin stars at the Tudor Room at Great Fosters Hotel in Surrey and at Ireland’s Cliff House Hotel.

His CV spans more than 20 years and includes stints at renowned Copenhagen restaurants Noma and Kommandanten, as well as time spent working as a private chef for Lord and Lady Bamford.

More recently, he has spent the past year working with a number of leading chefs, including Aktar Islam at his two-Michelin-starred Birmingham restaurant Opheem, and with Andrew Sheridan’s Open Restaurant Group.

Posting on Instagram, Parkin said: “I would just like to take this opportunity to thank all my close friends who have been there for me this year. I look forward to thanking you with dinner in the new year — you know who you are.”

Further details about the project are expected to be announced after Christmas.
