What was your first industry job?
I used to work during my school holidays at Café Soho, then owned by David Wolanski (of Chick ’n’ Sours). Fun fact: he bought me my first set of knives as payment.
If you weren’t in kitchens, what would you do?
I was always creative as a youngster. Perhaps if I’d been able to sit down in a classroom, I could have been an architect or something.
What industry figure do you most admire?
I’m going to choose my old pal David Wolanski. He’s managed to diversify and adapt, going from strength to strength. His passion for craft and perfection is very inspiring, always aiming for - and achieving - best in class. He’s also been a great mentor and inspiration to me.
What’s your pet hate in the kitchen?
Leaving half-unwrapped cling film on containers for service. Gross.
What’s the oddest thing a customer has said to you?
“Thank you.”

What’s the worst review you’ve ever had?
A guest was shouting at her mother in the restaurant during a lunch service, and our GM politely asked her to keep it down as it was disturbing the rest of the dining room. She then left a very distasteful review. Thanks!
What advice would you give someone starting out in the industry?
There’s no easy way forward. It takes hard work, commitment and resilience. Surround yourself with passionate, like-minded individuals who inspire you and make you want to come to work and learn.
Which single item of kitchen equipment could you not live without?
Sharp knives.
What would you choose to eat for your last meal?
A home-cooked dinner from my mum.

What’s the best meal you’ve ever had in a restaurant?
BiBi. Crazy that they don’t have a star. Complete nonsense.
What’s your favourite fast food joint?
Black Bear Burger. Their double miso bacon absolutely slaps.

The Big Mac.

Great British Menu.
What’s the most overrated food?
Paella and chocolate-covered strawberries at Borough Market.
You’re restaurant dictator for a day -what would you ban?
No-shows. I can’t believe it still goes on. People should get community service for not turning up.
Who would your dream dinner party guests be?
Jeremy King, John Williams, Pierre Koffmann, Ricky Gervais, James Corden and Dr Dre.
What’s your earliest food memory?
My booba’s chicken soup.

What’s the closest you’ve ever come to death?
Yesterday - I left the toilet seat up. My wife was very unimpressed.

It depends on the occasion, but I usually start with either a Guinness or Champagne.

Domino’s Pepperoni Passion and Nuits-Saint-Georges.
