Revealed at the very end of last year, DAISE will be run in partnership with his former employer, Open Restaurant Group (ORG), which is led by chef Andrew Sheridan and his business partners Sam and Emma Morgan.
Expected to launch early this year, the restaurant will take over the premises formerly occupied by ORG-owned OXA in Oxton, Merseyside.
Billed as Parkin’s debut solo restaurant, DAISE will see him working alongside his wife, Laura, who will run front of house.
The restaurant is named after the couple’s daughter, Daisy.
“I’m really excited to have my name above the door, along with opening a restaurant that will be personal for both myself and Laura and will give our guests a relaxed experience with high quality food and a warm welcome,” says Parkin.
Sheridan adds: “Tony is a brilliant chef, and Open Restaurant Group is delighted to be able to support him and Laura in the opening of DAISE. We look forward to DAISE becoming a well-established and much-loved restaurant in the area.”
Parkin has earned Michelin stars at the Tudor Room at Great Fosters Hotel in Surrey and at Ireland’s Cliff House Hotel.
His CV spans more than 20 years and includes stints at renowned Copenhagen restaurants Noma and Kommandanten, as well as time spent working as a private chef for Lord and Lady Bamford.
ORG has eight sites, including three AA Rosette-holding 8 By Andrew Sheridan in Liverpool, and Sow on the Netherwood Estate in Worcestershire.
Other venues include Dishes in Prestatyn; The Bracebridge in Sutton Coldfield; and Black & Green, and Cofton on the Green in Barnt Green, Worcestershire.
