Country Creatures duo reveal more details on upcoming Cotswolds pub

Country Creatures founders Sam and Georgie Pearman have unveiled further details of the team and food offering at their upcoming pub, The Wild Duck Inn.  

Food will be led by group executive chef James Adams, formerly of Spring and The River Café, working alongside head chef Richard Sandiford (ex-Hawksmoor, Bistrotheque).

Located in Ewen in the Cotswolds, the 110-seat restaurant will offer a seasonal menu centred on British produce, with suppliers including Wright Bros, Cotswold Curer, Jonathan Crumb and Neal’s Yard.

The menu will begin with bar snacks, written on the blackboard by the bar, with dishes including half-pint langoustine scampi and tartar and Gruyere; and Cheddar and tomato toastie; before moving into larger plates such as wood-roasted brown trout with beetroot and horseradish Pink Fir potatoes, and whole roast duck, served with turnip gratin.

The Wild Duck Inn will also offer breakfast options such as the Full English Breakfast, with homemade black pudding, chopped brown sauce, bone marrow toast and a sugar pit bacon chop, as well as Sunday roasts served from 12am until 6pm.

Overseen by general manager George Dean, the bar will sit at the heart of the pub on the ground floor with drinks encompassing ales, lager and beers from Stroud brewery Uley alongside Allsopp’s and Double Diamond.

Curated by head of wine Andrea Domenicucci, the wine list will focus on French and Italian producers.

The bar will also serve a handpicked selection of ‘stickies’, brandies and ‘refined’ eaux-de-vie, including Vieille Prune.

Originally the gardener’s cottage to nearby Ewen Manor, The Wild Duck Inn has undergone a major renovation to transform the once-derelict building into a pub with rooms.

The property will feature 19 bedrooms, many with private terraces, alongside a bar, restaurant, garden and two treatment rooms.

Design has been led by Georgie Pearman, who has worked with British and local designers and artisans, including Zardi and Zardi, Lewis & Wood, Parker & Jules, Watts of Westminster, Edward Bulmer and Stroud-based lighting company Trainspotters.

The Wild Duck Inn will join Country Creatures’ existing estate that includes The Double Red Duke and The Mason’s Arms in Clanfield.

Announced last May, the pair’s upcoming pub is set to open on the 2 March.
