The restaurant, located on Byres Road, is the QSR brand’s largest in the UK, with seating for 40 customers.
Zambrero’s menu includes burritos, bowls, tacos, nachos, and quesadillas, with slow-cooked meat fillings as well as vegetarian and vegan options.
The Glasgow opening follows the brand’s delivery kitchen, which it opened in Glasgow in September 2025.
Since launching in the UK in 2021, Zambrero now has sites in London, Manchester, Birmingham, Reading and Essex. It has previously unveiled plans to reach 100 UK restaurants by 2030.
The Scottish restaurant is being run by Australian restaurateur Dan Hawley. “I’m thrilled to have opened the first Zambrero restaurant in Glasgow and Scotland,” he says.
“We’ve already had a great response, with hundreds of people coming out to support us on our opening day. I saw an incredible opportunity for the brand here.”
Globally, Zambrero has more than 350 restaurants in Australia, Ireland, New Zealand, the US, and the UK and is the largest Mexican restaurant franchise in both Australia and Ireland.
