The Canadian-born chef began his career at 15 in a catering kitchen in British Columbia before undertaking formal training at SAIT Polytechnic.
He then went on to work in Vancouver as sous chef at West Restaurant and later as chef de cuisine at Tableau within the Michelin-recommended Loden Hotel.
In 2022, Miller relocated to London, joining the two-Michelin-starred The Clove Club before moving to Alex Dilling at Hotel Café Royal as sous chef.
After more than two years working alongside Chef Alex Dilling, he has now been promoted to head chef.
Miller’s competitive accolades include winning the 2024 S.Pellegrino Young Chef Academy UK National Final, earning the Acqua Panna Award for Connection in Gastronomy and placing second in the 2022 SPYCA Canada National Finals, and representing Team Canada internationally in Hong Kong.
The former executive chef Pierre Minotti, who joined Alex Dilling at Hotel Café Royal in 2022, has moved to Orrery, where he has been appointed executive chef by owner The Evolv Collection. His appointment is part of an effort to regain the restaurant’s Michelin star.
