Connor Gadd confirms opening date for first solo venture

Connor Gadd has confirmed that his debut solo restaurant will open on 11 March.

First announced at the end of last year, Burro takes its name from the Italian word for butter.

The Covent Garden restaurant will serve traditional Italian dishes and include a bar, main dining room and all-season terrace, designed by Lisa Helmanis at DAY Studio.

The official launch will be preceded by a three-day soft opening from 6–8 March, during which lunch and dinner bookings will be available with 50% off the food menu.

The menu focuses on regional Italian cooking. Antipasti will include salumi and house-made focaccia, Venetian-style chicken livers on garlic toast, Burro caponata and cuttlefish stuffed with breadcrumbs and anchovies.

As at Trullo, pasta forms the backbone of the offer. Dishes include duck ragù made with Aylesbury duck and dried porcini, cooked slowly and served with tagliatelle; tortellini in brodo inspired by Emilia-Romagna, with a pork-based filling featuring mortadella and prosciutto; and fettuccine Alfredo, prepared with fresh egg pasta, butter and 36-month-aged Parmigiano Reggiano.

Secondi will centre on produce-led dishes built around long-standing relationships with British farmers and fishermen. Examples include vitello al burro, Dover sole with prosecco and caviar, and lobster acqua pazza made with British lobster and shellfish sourced from day boats around the UK coast. Daily specials and larger sharing dishes will also feature.

Desserts include tiramisu doughnuts and an almond cake served with sweet Marsala from Curatolo Arini in western Sicily.

“Never in my wildest dreams did I imagine opening a restaurant in Covent Garden,” says Connor Gadd.

“But as soon as I saw the room — and the courtyard — I knew it was an opportunity I couldn’t miss.

“It’s been a labour of love with a brilliant team, and we can’t wait to welcome guests with some amazing food served in the warmest, most elegant of rooms.”
