MRBL, a modern British steakhouse, is set to open in London’s Leadenhall Market this March.

The 75-cover restaurant will span two floors, encompassing a private dining room and an outdoor terrace which will overlook the market.

Following the launch of Boom Bap Burgers in 2015, the new venue will be the second venture from restaurateurs Anthony Gaughan and Stephen Bagatti.

MRBL’s menu will include nibbles and starters such as, chipolatas with English mustard and slow-braised rump croquettes; and ‘House Cuts’, including Chateaubriand and Porterhouse cooked on the bone - designed for sharing. Steaks come with a choice of flavoured butters, such as blue cheese and fermented chilli; alongside classic sauce options. Sides include marrow mash, beef fat triple-cooked chips, hash browns with black garlic aioli, Caesar salad and charred hispi cabbage.

Meat will be supplied by HG Walter and responsibly sourced from native breeds, slow-reared and grass-fed. Cuts are aged with Himalayan salt and cooked over charcoal.

Beyond steak, dishes include grilled monkfish tail and roast chicken, both cooked over charcoal. Desserts include apple pie with custard, burnt lemon tart and a British cheese plate, alongside a concise list of dessert wines, ports and after-dinner cocktails.

At lunch, the MRBL steak sandwich pairs slow-braised rump with smoked cheese and Guinness onions. After work, a dedicated martini and fries menu is available, with martinis served crisp or dirty.

The kitchen will be led by executive chef Matt Colk, whose experience includes Aviary Rooftop & Restaurant and The Gun.

“It’s about respecting the ingredient and letting it speak for itself.”

In partnership with wine consultant Nicola Hale (Vin Hale), MRBL offers a wine list balancing classic regions with new discoveries. The selection is complemented by craft beers, lagers, Guinness and classic house cocktails.

Leadenhall Market was once home to London’s meat, game and poultry traders - MRBL feels like a natural evolution of the market’s deep-rooted history.

“We hope MRBL honours that tradition whilst bringing a fresh, contemporary energy to the space.”

MRBL will be open seven days a week from 12pm to 9pm.
