Following on from its Michelin Guide-listed sister restaurant Heritage in Dulwich, the new opening will offer modern Indian comfort food in a more relaxed and informal setting.
BAUJI, which draws on the Hindi word for ‘father’, will offer flavours from Sharma’s childhood in Rajasthan, shaped by family recipes.
Located a short stroll from the seafront, the restaurant is set to accommodate 45 covers with an additional 10 guests seated in a private dining room.
The menu will include tandoori avocado and venison; dahi ke kebab (paneer wrapped in kataifi); Konkani fish tikka (stone bass in coconut and curry leaves); and dhaba ka murgh, inspired by Rajasthan’s roadside eateries. A number of favourites from Heritage Dulwich will also feature, such as shatkora jhinga (prawns flavoured with Bangladeshi citrus) and gunpowder broccoli.
“Following the success of our Dulwich restaurant, opening BAUJI feels like a natural next step,” says executive chef Sharma.
“Worthing’s charm, strong sense of community and flourishing independent food scene made it the right location for a more relaxed expression of our cooking, inspired by the food and memories of home.
“The enthusiasm we’ve already felt from the town has been incredible, and I’m excited to share our flavours with a new audience.”
Designed by Sarina Gurung of Cozy Ghar Interiors, the space will feature pink tiles inspired by the sandstone cities of Jaipur, with natural materials including wicker, stone, straw and greenery creating a warm setting to reflect Rajasthan’s earthy palette.
