Neapolitan pizza brand Forbici to open its third site

Neapolitan pizza brand Forbici is doubling up in Manchester with the launch of a second site in the city.

The brand, which is owned by Individual Restaurants, which also owns the Piccolino, Restaurant Bar & Grill, and Riva Blu brands, will open at The Orient in the Trafford Centre this summer.

The move signals the brand’s ambition to scale beyond city-centre locations, according to the company.

The restaurant will serve Forbici’s pizza made with a slow-fermented Biga dough. Meaning ‘scissors’ in Italian, Forbici pizzas are cut with scissors in four ways.

Pizzas on the menu will include classics such as the marinara, margherita and American, alongside Italian-inspired creations like the provola e pepe, topped with San Marzano tomato, smoked provola, black pepper and fresh basil; and the porcini e tartufo, made with Fior di latte, porcini mushrooms, Italian truffle sauce and chives.

Forbici’s Manchester special, the Lancashire Hotpot made with fior di latte, lamb ragú and black pepper served on a Forbici biga dough base, will also featue.

“Expanding into a leading leisure destination allows us to introduce Forbici to a broader audience while maintaining the craft and precision that defines our pizzas.”

Founded in Manchester just over a year ago, Forbici has since expanded to Sheffield.
