Napoli on the Road unveils pizza tasting menu at its Soho restaurant

Pizza restaurant Napoli on the Road will launch its pizza tasting menu at its newly-opened Soho restaurant this month.

The tasting menu is an attempt by Michele Pascarella to reframe the modern pizzeria and will begin with tomatoes in four different stages of preparation (pictured below) cooked for two, six and 10 hours.

Then will follow a selection of Ffritti before diners are served the first half of the pizzas, beginning with asparagus and anchovy colatura - a white pizza topped with pecorino and colatura, anchovy sauce from the Amalfi Coast town of Cetara and followed by a margherita made from a base of barley and rye that has been fried and then baked in the oven and topped with slow cooked datterino tomato, Piennolo tomato jam, buffalo mozzarella and wild garlic pesto.

Also on the menu will be barattiere, an Apulian cucumber, paired with citrus fruits and verbena as a palate cleanser, followed by a reinterpretation of vitello tonnato, and the Ricordi d’Infanzia (‘Memories of Childhood’) that is inspired by Pascarella’s family cooking and which is a pizza is topped with 10- hour slow cooked cuts of beef ribs, shin, oxtail and pork ribs.

For dessert will be a selection of dolci inspired by classic Italian pastry trays including a ricotta cream tartlet; zuppetta diplomatica with layers of custard cream and sponge cake soaked with Alchermes liqueur; and a mini ice-cream bar coated in dark chocolate and hazelnuts.

“Our tasting menu was not created with the idea of making something complex or ‘starred’, says Pascarella.

“We did not want to impress with techniques for their own sake or build a journey that feels distant from people, but to do exactly the opposite. We want to tell a story made of memories, seasonality, ingredients, and flavours that everyone can understand from the very first bite.”

The pizza tasting menu will cost £65, with an additional wine pairing available for £40.

Napoli on the Road Soho is the group’s first in Central London location, joining its sites in Chiswick and Richmond.

Split over two floors, the Soho sites serves an à la carte menu on the ground floor while the basement will house the tasting menu concept.
