Three Darlings ‘enters new culinary era’

Jason and Irha Atherton’s neighbourhood Chelsea brasserie Three Darlings is undergoing a new culinary direction that takes its cues from their new Tuscany venue.

The Chelsea restaurant will serve as a UK counterpart to MARIAS, the Mediterranean restaurant at hotel Principessa Forte dei Marmi in northern Tuscany that the Atherontons opened earlier this year.

The couple will bring the ‘slow-paced rhythm of Riviera dining’ to Three Darlings, including its 30-cover terrace, with a new menu inspired by Jason’s time creating MARIAS.

The seasonal menu includes beef tartare with a peppercorn sauce and paprika crisps; Cornish bluefin tuna served raw with thinly sliced tomatoes and tomato confiture; St Austell Bay mussels and clams with a garlic smoked mussel emulsion; and Italian peach and avocado salad, finished with aged pecorino.

A fish special of Red Cornish sea bream with saffron potato and bouillabaisse is also available.

Named in tribute to the Athertons’ three daughters-Keziah, Jemimah, and Athena, Three Darlings opened on Chelsea’s Pavilion Road in late 2024.
