EMBER at The Chandlers Arms to open in The Cotswolds

The teams behind EMBER taproom and The Chandlers Arms are joining forces to bring a live-fire restaurant and taproom to The Cotswolds.

Co-founders Matty Cartwright of EMBER and Harry Flockhart of The Chandlers Arms will open EMBER and The Chandlers Arms this August in the village of Epwell that will take inspiration from their travels across America and South America as well as the Eastern Mediterranean and East Asia.

Each dish on the menu is inspired by the founders’ travels using seasonal British produce, sourced wherever possible from farms within a 10-mile radius. The menu will feature a rotating selection of shareable small and large plates, including smoked apple cobbler pork belly; smoked beef cheek massaman; potato pavé with whipped pimento cheese; and a signature Ember burger.

The drinks programme will showcase craft beers from around the world, with a selection available on draught alongside a range of cans and bottles. The duo will also brew their own cask ales exclusively for the pub. The cocktail menu, meanwhile, will exclusively feature spirits from Cotswolds Distillery, and will include serves such as the Grapefruit Gimlet and Brown Butter Old Fashioned.

The pub’s interior will feature low lighting, and an eclectic mix of reclaimed furniture, vintage Chesterfield benches, and velvet sofas as well as pieces from Cartwright’s personal art collection, including a bust of Jimi Hendrix.

Cartwright gained a knowledge of the traditions of live-fire cooking during his travels in the Carolinas and Texas, while Flockhart Harry learned his craft in France, working alongside his father in the family restaurant.
