The appointment reunites Catchpole with Rogan and Umbel Hospitality global executive chef Oli Marlow following four years at the group’s Roganic restaurant in Hong Kong.
Tayler, who has led the Aulis kitchen since 2020, revealed in a video posted on Instagram that he was leaving to pursue an as-yet-unannounced project.
Catchpole began his career in restaurants and hotels across southeast England before going on to work in some of the UK’s most respected kitchens.
He first met Marlow while working at Heston Blumenthal’s The Fat Duck.
In 2017, Catchpole moved to Australia to join celebrated Melbourne restaurant Attica, where he worked closely with chef patron Ben Shewry.
He joined Roganic Hong Kong in 2022, rising to senior sous chef.
Working alongside Marlow, Catchpole will oversee Aulis London’s intimate chef’s-table experience and develop its “constantly evolving, seasonally driven menu”, which uses produce grown at Rogan’s Our Farm in the Cartmel Valley.
Launched in 2017, Aulis is Umbel Hospitality’s only London restaurant.
Headquartered in Cumbria, the group operates several restaurants in and around Cartmel, including Rogan’s three-Michelin-starred flagship L’Enclume, as well as Skof in Manchester, AO by Daniel Rogan in Southampton and international restaurants in Hong Kong, Malta and Thailand.
“I’m incredibly excited to be working with Simon and Oli again and to take on this next chapter at Aulis London,” Catchpole says.
“During my time at Roganic Hong Kong, I learnt so much from them and developed a real understanding of Simon’s approach to food, produce and creativity.
“It’s a real privilege to be trusted with this role, and I’m looking forward to building on everything the team has created at Aulis so far.”
