Galvin brothers to launch Bistrot de Luxe-inspired restaurant on former HOP site
The Spital Square restaurant will draw influence from the pair’s sorely missed inaugural venture together Bistrot de Luxe, which launched 15 years ago and closed in 2018.
Adjoining the pair’s Michelin-starred Galvin La Chapelle, the space will ‘refresh and re-imagine’ elements of the influential Baker Street restaurant ‘for a new generation’, transporting guests to ‘the renowned bistrots of Paris and Lyon through a concise, changing menu of seasonal dishes using the best quality produce’.
Galvin HOP launched in 2016 as the respected duo significantly expanded their operations.
Led by Chris and Jeff, the kitchen at Galvin Bistrot & Bar will offer dishes including steak tartare; confit of duck with cassoulet beans; cod and lobster brandade; pavé of cod with leeks and mussels in a mouclade sauce; and slow-cooked beer braised pork cheeks with black pudding parmentier.
Founder of East London based Uncharted Wines, Rupert Taylor,will source wines from small vineyards across the world with La Chappelle Sommelier Stephen Nisbet curating the Galvin Bistrot & Bar wine list.
Alongside bottles of different vintages, they will also offer wines on tap and by the glass starting from £6. The site will continue to offer ‘brewery-fresh’ Czech Pilsner stored in burnished copper tanks suspended above the bar.
“It was devastating when we had to close Bistrot de Luxe a few years back, but we’re so pleased to be able to bring something new, but also slightly familiar to our customers," says Chris.
"We continued to engage with our customers throughout lockdown and we knew that they were yearning to walk back through our doors so we thought this was the perfect time to bring back a much-loved gem."
