Chefs Clare Smyth and Daniel Boulud will each oversee a signature restaurant at Waldorf Astoria London Admiralty Arch when it launches in 2026.

Owner Hilton says the collaboration marks an ‘exciting step’ for its upcoming central London property as ‘the historic building is restored back to its former glory ahead of its unveiling as a world-leading luxury hotel’.

The pair - who hold seven Michelin stars between them - are described as the hotel’s chef partners.

For Smyth, the new venture will be her second London restaurant project joining her three-Michelin star Notting Hill restaurant Core by Clare Smyth.

The project will be a homecoming for high-profile US-based chef Boulud who ran a restaurant at the Mandarin Oriental Hyde Park, London between 2010 and 2020.

“With Clare Smyth and Daniel Boulud both confirmed to bring new culinary concepts to the property, Waldorf Astoria London Admiralty Arch is set to be a truly exceptional dining destination in the heart of the British capital,” says Waldorf Astoria London Admiralty Arch general manager Guillaume Marly.

“We look forward to unveiling more details about these exciting chef partnerships in the coming months.”

Under its Waldorf Astoria Hotels & Resorts brand, Hilton - in partnership with property group Reuben Brothers - is transforming the landmark - which provides road and pedestrian access between The Mall, which extends to the southwest, and Trafalgar Square to the northeast - into a 100-bedroom luxury hotel.
