Etch chef Steven Edwards will launch a more casual venture at Brighton & Hove Albion Football Club this spring.

Etch chef Steven Edwards will launch a more casual venture at Brighton & Hove Albion Football Club this spring.

BITES by Steven Edwards follows the success of the Masterchef: The Professionals winner’s more exclusive The Tunnel Club, in which diners are able to watch players as they prepare to step onto the pitch.

Located within The Terrace - a venue that will seat 1,000 fans inside and 2,000 outside - BITES will offer a premium fats food menu that is focused on burgers and hot dogs.

Options will include the Beefed Up burger, featuring three 3oz dry-aged beef patties, Swiss cheese, and beef jam; and the The Bratbest beef hot dog featuring a Japanese milk bread sub, Frenchie’s mustard mayo, curry ketchup, onion seeds and crispy onions.

The concept will be delivered by the Premier League football club’s catering partner Sodexo Live!

“I love a good burger and it’s been great fun working on a concept that’s so different to what we create and serve at Etch,” Edwards says. “The patties and hot dogs are packed with flavour and I’ll be regularly changing the menu to make the most of seasonal ingredients. I can’t wait to see the fans enjoying my menu.”

Russell Wood, head of commercial at Brighton & Hove Albion FC added: “The Terrace will offer a fantastic new space for fans to meet, eat and socialise before and after home matches. Our aim is to make The Terrace a destination venue within the site for non-match day events and hospitality too and we are delighted to have Steven working with us to help make that happen.”

Etch launched in 2017 is currently ranked number 91 on the National Restaurant Awards top 100 list.
