Joe Grossmann to launch second London pub

Patty & Bun and The Waterman’s Arms founder Joe Grossmann is to take on well-known Soho pub The Shaston Arms.

Just off Carnaby Street on Ganton Street, the diminutive pub is undergoing a refurbishment and will retain its original name when it relaunches this Autumn.

The project follows the success of Grossmann’s Barnes pub The Waterman’s Arms, which launched in 2023.

Grossmann is set to introduce a food offer to the pub and has appointed former Ducksoup chef Sam Andrews to create the menu and lead the kitchen.

In its new incarnation, The Shaston Arms will offer elevated pub classics in a pared back style.

The 35-cover space will ‘seamlessly blend drinking and dining environments’.

“At The Waterman’s Arms, we took on a much-loved pub that unfortunately had to close, and gave it a new lease of life. The results and accolades speak for themselves, and we feel privileged to be able to bring that expertise to bear in Soho, a neighbourhood renowned for its hospitality,” Grossman says.

The Shaston Arms is an icon among the West End’s pubs, so we’ll be putting our stamp on it in a caring and considered way, that reflects its importance.”

One Voice Hospitality founder Ted Schama, who acted for Grossmann on the deal, added: “The Shaston Arms is a real gem – a true Soho original – and I’ve always believed that great operators should be the ones inheriting spaces with such soul.

Joe and I have worked together over many years, and he’s got the sensibility to balance heritage with fresh energy. As the pub landscape in Central London continues to reshape, this kind of move feels especially relevant.”

Joe and his team are the perfect match for how we want it to evolve, using all their experience at The Waterman’s Arms to create something that is first and foremost a great pub, with a quality food offer in addition and a real independent feel.”

Grossman is best known in the industry as the founder of better burger chain Patty & Bun, which launched in 2012 and currently operates five restaurants in London and a further location in Brighton.
