Sheridan and his business partners Sam and Emma Morgan plan to rebrand the Bridge Street restaurant as Noted.
The acquisition takes the number of restaurants owned by the trio’s fast-growing Open Restaurant Group (ORG) to eight.
This includes Sheridan flagship 8 by Andrew Sheridan in Liverpool; OXA in The Wirral; Dishes in Prestatyn; and the recently launched Sow in rural Worcestershire.
Sheridan, who trained at Michael Caines’ fine dining restaurant in ABode Hotel in Chester, said: “I spent the first part of my career working in Chester, and I regularly visit the city for dining, so I was always keen to open my own restaurant there.
“I am delighted to have found an amazing intimate site in the heart of the city where we can showcase great food, service, and warm hospitality.”
Da Noi closed last year after six years trading to concentrate with owners Fabrizio Gobbato and Valentina Aviotti saying they wanted to focus on their Augusto Pizzeria and Krum Gelato businesses, which are also based in Chester.
