Tony Parkin has been named development chef at Andrew Sheridan’s rapidly expanding Open Restaurant Group (ORG).

Parkin joins the group from Atkar Islam’s two-Michelin-starred Opheem where he briefly held the position of head chef.

He will work with Sheridan on menu development across the group, which now operates a total of eight restaurants including 8 By Andrew Sheridan in Liverpool and the recently acquired Sow on the Netherwood Estate in Worcestershire.

“I am very excited to join Andy, Sam and Emma at Open Restaurant Group, and for the opportunities and challenges ahead,” Parkin says.

Sheridan added: “Tony is a brilliant chef who brings with him loads of experience and we can’t wait to see what he’ll bring to ORG.”

Parkin’s CV spans more than 20 years and includes stints at renowned Copenhagen restaurants Noma and Kommendaten, as well as time as a private chef for Lord and Lady Bamford.

More recently, he has attracted Michelin stars at The Tudor Room at Great Fosters Hotel in Surrey and Ireland’s Cliff House Hotel.
