Tell us about the moment you first became interested in wine
It was during my first ever job - the hotel Esplanade in Zagreb. Every month we used to have gala wine dinners with winemakers. It was the very moment I fell in love with wines.

A great collection of Argentine wine. Starting from north to south we cover almost all the regions offering different grape varieties and lots of older wines.

67 Pall Mall and Alain Ducasse at the Dorchester in London, and Nautika in Dubrovnik.
Who do you most respect in the wine world?
The late Miljenko ‘Mike’ Grgich (a famed Croatian-American winemaker).
What’s the most interesting wine you’ve come across recently?
Zuccardi Soleria Fortified Torrontés.
What are some overused tasting notes?
Fresh and full bodied.
What’s the best value wine on your list at the moment?
Françoise Monay Brut NV, France. A great grower champagne that offers amazing quality for the market price.
What is your ultimate food and drink match?
Oysters and Champagne.
Old World or New World?
Both Worlds.
What is your pet hate when it comes to wine service in other restaurants?
Incorrect wine temperature and inappropriate glasses.
Who is your favourite producer right now?
There are so many but I’ll just mention one - Paul Vincent Avril of Domaine du Clos des Papes. I had a chance to visit his winery and to taste some of his great wines. As a Rhone Valley wine lover, I find his wines truly exceptional.

Which wine producing region or country is underrated at the moment?
Argentina. It offers great wines that are undervalued when it comes to aging and collecting. Some of the wines can be compared to the very best the world has to offer.
It’s your last meal and you can have a bottle of any wine in the world. What is it and why?
It would be 2001 La Tâche, Grand Cru, Domaine de la Romanée-Conti. I had a chance to drink this beauty on one occasion and it was simply one of the best wines I have ever had.
