Liverpool-born Middle Eastern-via-Paris inspired restaurant group Maray will open a restaurant in Chester this winter.

The launch will bring Maray up to a total of four locations joining two sites in Liverpool and a further site in Manchester.

The new restaurant will feature a menu of long standing favourites such as the Disco Cauliflower (cauliflower, harissa, tahini, zhug, pomegranate and sumac); falafel; and Medjool date bread and butter pudding.

Founded in 2014 by Tom White, James Bates and Dom Jones, the Maray concept was originally inspired by the owners’ experiences in the Le Marais district of Paris, an area influenced by Middle Eastern food.

“We’re absolutely thrilled to be bringing our fourth Maray site to Chester,” says co-founder and managing director James Bates.

“It’s a city I have previously worked in and long admired, and we feel it shares a lot of the same spirit and character that made us fall in love with our first site on Bold Street. We can’t wait to open the doors and become part of the community.”

Maray co-founder and brand director Tom White added: “We’ve worked closely with Cheshire West and Chester Council to find this lovely building and we’re grateful for their support as we prepare to arrive! It’s a really spacious site and we’ve got a surprise or two up our sleeves to bring something fresh and new to the people of Chester.”
