Humm, actually... Eleven Madison Park puts meat and fish back on the menu

New York-based chef Daniel Humm is putting animal products back on the menu at Eleven Madison Park four years after making the three-Michelin-star restaurant plant-based.

In a statement posted on Instagram, the world famous chef said the Manhattan restaurant - which is a global standard bearer for high-end vegan dining - would continue to offer a plant-based menu but would add in ‘select animal products’ for certain dishes.

Humm - who parted ways with top London hotel Claridges in 2021 over his desire to only offer a plant-based menu at his Davies and Brook restaurant - says that to truly champion plant-based cooking he needs to “create an environment where everyone feels welcome around the table.”

“Change is fundamental to who we are and how we grow. As I approach my 20th anniversary at EMP, I’ve decided it’s time for change again,” the statement reads.

Humm made global headlines in 2021 for turning Eleven Madison Park into a plant-based only restaurant.

In its current guise, it is the only three-Michelin-starred restaurant in the world that does not serve animal products.

The U-turn has caused dismay among Eleven Madison Park’s considerable vegan following with a number of commenters vowing never to return.

Meat and fish will be introduced to the menu on 14 October, including Eleven Madison Park’s signature honey-lavender-glazed duck.

Eleven Madison Park is a former World’s 50 Best Restaurant having topped the list in 2017.
