The top line: International smash burger concept Chuck’s has put down roots in London following a string of successful pop-ups. As the name suggests, Chuck’s at No. 23 is located within Fitzrovia chef residency venue Carousel’s adjoining cocktail bar No. 23, which has acted as an incubator of sorts for a number of high-profile brands including Poon’s, Goila Butter Chicken and Chuck’s, which popped up there last summer. Chuck’s was launched in Milan in 2022 by Newport, Rhode Island-born and perfectly monikered Chuck George. The brand has since expanded to Paris and Rome and, most recently, Madrid.
On the menu: Known for its no modifications policy and “no faff” approach, Chuck’s is one of London’s more stripped-back smash burger concepts, essentially offering just one burger with cheddar, pickles, white onion and Chuck’s proprietary burger sauce. While it can’t be modified, it can be ordered as a single, double or triple, and it’s also possible to add bacon and extra cheese. Served in a soft potato roll, the burgers are smashed in a manner that makes them very thin and crispy. The only side on offer is a (very good) portion of fries.
The vibe: The original Chuck’s in Milan is known for its graffitied walls and booming hip-hop but its London iteration is a more muted affair. The arrival of a permanent Chuck’s has seen No. 23 cease being a pop-up space but the design hasn’t changed, meaning that it looks more like a cocktail bar than a burger restaurant. Unlike previous pop-ups in the space, Chuck’s will trade into the evening.
And another thing: George is looking to go big with further expansion planned in London and Amsterdam this year.
