Cosmo spin-off brand Umami to open at Gloucester Quays

Cosmo Restaurant Group is bringing its spin-off concept, Umami, to Cotswolds designer outlet Gloucester Quays.

The restaurant will mark Umami’s debut in the South West, introducing an ‘elevated’ world buffet format.

The concept will feature a broad mix of international cuisines, including Chinese, Italian, Indian and British dishes, alongside made-to-order options such as a dedicated teppanyaki chef station.

Umami has signed for a 7,263 sq ft unit and will accommodate up to 243 covers.

The interior design will incorporate distinctive stonework and marble finishes.

Launched in 2023, Umami was created by Cosmo Restaurant Group as a more elevated counterpoint to its established buffet model.

The company has previously described the concept as a ‘luxurious East meets West’ format and, at launch, ‘the first of its kind’ in the UK market.

Umami currently operates three locations in Blackpool, Leicester and Telford, with further sites in the pipeline, including Colchester, Middlesbrough and Peterborough, as the group continues to expand the concept nationwide.

Cosmo Restaurant Group, which was founded in 2003, operates 22 sites across the country, with a presence in major cities including Belfast, Edinburgh, Bristol and Liverpool.

Muse Brasserie is also set to open at Gloucester Quays, having signed for a 3,282 sq ft unit with 100 covers, in the space previously occupied by Côte.

Following success in Cheltenham and Bristol, the French fusion restaurant will offer a varied seasonal menu, including a signature dish exclusive to Gloucester Quays — a light fish-based option inspired by the destination’s proximity to the historic port.

Gloucester Quays is also set to welcome a new casual Italian dining restaurant, Banchina, which will open on 25 March.

Comprising a 5,252 sq ft space, the venue will seat 132 covers, including 50 external covers for outdoor dining.
