Lewis Welburn returns to two-Michelin-starred Ynyshir as head chef

Two-Michelin-star restaurant with rooms Ynyshir has appointed Lewis Welburn as head chef, marking his return to the Welsh venue.

In his new role, Welburn will work alongside chef-patron Gareth Ward to lead the kitchen.

Originally from Reth, North Yorkshire, Welburn first joined Ynyshir in 2018, working under Ward alongside Corrin Harrison. In 2022, he stepped away from the kitchen to travel, spending time across Southeast Asia, New Zealand and Fiji before continuing through Europe.

During this time, he also worked in a number of respected kitchens, including Blanket Bay.

He returned to the UK in 2024 as senior sous chef at Forge at Middleton Lodge, where he played a key role in the restaurant earning its first Michelin star the following year.

“Coming back to Ynyshir is the ultimate homecoming,” says Welburn.

“I first walked into this kitchen at 18 and spent five defining years here, helping the restaurant achieve its two Michelin stars.

“Returning now as head chef is the opportunity of a lifetime.

“My goal is to work closely with Gareth to push this team further than ever and celebrate the best produce in the world, ensuring every guest has the best experience possible.”

Ynyshir opened in 2016 and remains Wales’ only two-Michelin-starred restaurant.

Run by Gareth Ward alongside his partner, Amelia Eiríksson, the restaurant serves 16 guests each evening with the dinner-only experience unfolding over up to 30 courses across five hours.

The menu showcases produce sourced by Ward, from A5 Wagyu to locally caught shellfish, and uses Japanese techniques and ingredients alongside dishes influenced by restaurants from his travels around the world.

Front of house is led by Eiríksson, with bespoke drink pairings offered in place of formal wine flights.
