Portfolio to launch ambitious multi-course tasting menu restaurant

The team behind Manchester-based champagne boutique Portfolio is opening a fine dining restaurant at the site next month.

The restaurant will sit within the existing Portfolio venue on Bridge Street, which is described as the UK’s first champagne boutique, and will serve a tasting menu of single-bite dishes, focusing on the snack element of fine dining rather than traditional course structures.

Guests will be able to choose between 14- and 18-course menus, priced at £135 and £155 per person, with optional champagne pairings selected from Portfolio’s list.

At lunch, the restaurant will offer a 10-course menu at £75pp with optional wine pairings.

The restaurant will have nine tables with the kitchen led by Portfolio’s co-founder chef Julian Pizer, previously of Another Hand and Edinburgh Castle.

The venue will continue to operate as a bar alongside the restaurant, open six days a week.

A dedicated snack menu will also be available in the bar, offering a more informal version of the kitchen’s dishes.

“I’ve always been drawn to the most memorable part of any meal - that single perfect bite, the one you remember long after the meal,” says Pizer.

“This menu is built around that idea: big flavour, perfect balance, all in one mouthful, designed to sit seamlessly alongside great Champagne.”

Launched late last year, Portfolio was established by Pizer and Cameron Foster, the founder of Deux Six – an importer specialising in grower champagnes.

The boutique is home to over 250 Champagnes from more than 70 producers spanning everything from entry-point Champagnes through to rare and highly sought-after cuvées.
