The Peninsula London will welcome back its rooftop bar and restaurant pop-up Soleil by Claude this July.

Running from Tuesday 14 July until Wednesday 2 September, Soleil by Claude will take over the eighth-floor terrace space used by the two-Michelin-starred Brooklands restaurant.

The seasonal concept will offer a Mediterranean-inspired menu featuring crudo dishes and sharing plates. Described by chef director Claude Bosi as a ‘breath of summer’, dishes will include sea bass carpaccio with cucumber and fennel; Galicia beef carpaccio; carpaccio of summer tomato; globe artichokes with anchovy dressing; lobster rolls with Koffman chips; steamed John Dory, piccata-style veal chop; and lemon roast chicken. Desserts include Tarte Tropezienne, Madeleines and an ice cream trolley.

Drinks will include champagne, sparkling wines and cocktails created by Brooklands Bar’s James Tamang such as a coconut negroni which mixes Planteray Cut & Dry Rum with Mancino Rosso Amaranto and bitters infused with rosemary, olives and orange.

Conceived by Bosi, the concept was launched at The Peninsula in 2025, with the chef describing it as a ‘celebration of Mediterranean-inspired dining, all while highlighting the rich bounty of the UK’s independent farms’.

“The response to the pop-up’s first year was incredibly rewarding,” says Bosi.

“Reopening it felt like a natural progression, an opportunity to build on that success, further evolve the concept, and create something even more memorable for our guests.

“It’s a project we’re very proud of, and we’re delighted to be welcoming people back.”

Following the pop-up, Brooklands by Claude Bosi will reopen on 3 September with a new autumn menu.
