Jonny Bone leaves Core by Clare Smyth after almost a decade

Core by Clare Smyth head chef Jonny Bone is stepping away from his position after almost a decade.

Bone has worked at the three Michelin-starred Notting Hill restaurant since its launch in 2017 and had previously worked alongside Smyth at three-Michelin-starred Restaurant Gordon Ramsay in Chelsea.

Announcing the news on Instagram, Bone took the opportunity to thank Core’s team, including restaurant director Rob Rose, and his chef peers.

“As I prepare to step away from my role as Head Chef at Core, I wanted to take a moment to thank the incredible chef community across the world,” he says.

“Over the years, I’ve been fortunate to work alongside, learn from, and share experiences with so many talented people. A special thank you to Clare and Rob for their trust, support, inspiration and friendship throughout this remarkable journey.”

“There are no worlds to describe the connection I have with them.”

Bone has also worked at the Michelin-starred Frédéric Simonin in Paris, three-Michelin-starred Geranium in Copenhagen, and two-Michelin-starred Blue Hill at Stone Barns in New York.

“I’m also deeply grateful to Nik, Gary, Alan, George, Gareth, and the many chefs, front of house, suppliers, producers, and friends who have collaborated with us through the day to day, events, dinners, and shared moments along the way you know who you are,” he adds.

“The generosity, camaraderie, and passion within our industry have meant more to me than I can express. While this is goodbye for now, it is only for the short term. I look forward to seeing many of you again in the next chapter.”

Smyth will open fine dining restaurant Coreus by Clare Smyth in the new Waldorf Astoria London Admiralty Arch later this year.

Bone has yet to announce what he plans to do next.
