Known for its Mexico City-inspired street food, Pablo’s offers freshly made tacos and salsas as well as al pastor carved from the trompo and suadero cooked on the plancha.
Pablo’s tortillas are made from masafina ‘conico’ heirloom corn, ground fresh each morning in London using volcanic millstones from Mexico. The pork comes from Paddock Farm’s Tamworth breed, while the beef is 35-day dry-aged from native breeds.
The new sites include signature dishes such as the cochinita pibil with achiote citrus-braised pork, pickled red onion and coriander; and the pescado taco with masa-battered fish, salsa macha mayo, lettuce and pico de gallo; alongside a full selection of tacos, sides and salsas.
The expansion follows Pablo’s Taqueria’s debut at Arcade Covent Garden, which opened in May this year. The 385-cover venue, set across a single floor, has been described as ‘the most ambitious expression of the Arcade model to date’.
