Created in collaboration with Banks’ premium home delivery service Made in Oldstead, the six-course 20th Anniversary Celebration Menu has been developed alongside executive chef Callum Leslie and head chef Alice Power. Inspired by dishes from The Black Swan’s tasting menu, it will be available for nationwide delivery on 20, 21, 27 and 28 August, priced at £119 for two.
The anniversary menu showcases ingredients central to The Black Swan’s hyper-local approach, including wild garlic, lovage, elderflower and crapaudine beetroot, alongside lamb and beef reared on the Banks family farm.
The menu includes snacks such as duck liver and blackcurrant croustade; goat’s cheese; wild garlic and pickled walnut brioche; and tomato ‘steak’ with lovage and fennel pollen. Courses of braised beef cheek with laminated ale and onion brioche; loin of Yorkshire lamb with kohlrabi and hispi follow. Desserts include elderflower parfait with sheep’s yoghurt, caramelised white chocolate and honeycomb; before finishing with one of the restaurant’s signature dishes, Crapaudine beetroot with beetroot sherbet.
Throughout August, diners at The Black Swan will also be able to order a special 2006 vintage wine pairing to accompany the tasting menu, headlined by Pol Roger Vinothèque 2006, which will be available exclusively at the restaurant in the UK.
The collaboration launches as part of a wider programme of celebrations, including those taking place at The Black Swan throughout August. A special 2006 vintage wine pairing - celebrating the year the family took over the restaurant - will run alongside the tasting menu, including a 2006 Pol Roger Vinothèque. The champagne will be available exclusively at The Black Swan, with just 90 bottles in existence and 30 waiting in its cellar, available by the glass, by the bottle, or as part of the wine pairing.
The anniversary programme also includes the launch of a limited-edition 20-ingredient Negroni, developed over 18 months using herbs, fruits and foraged botanicals from The Black Swan’s kitchen garden and surrounding countryside.
Tommy Banks is also the chef-owner of the Michelin-starred restaurant Roots in York, as well as the acclaimed pub The Abbey Inn in Byland.
The celebrations marking the anniversary of the Banks family’s takeover of the North Yorkshire village pub coincide with Yorkshire Day, which is also celebrated on 1 August.
The Tommy Banks Group launched the nationwide premium delivery service Made in Oldstead following the closure of restaurants as a result of Covid-19 in 2020. What started as a mechanism to make use of the produce from the restaurant group’s two-acre Kitchen Garden and 160-acre farm, Made In Oldstead, has since become a key part of the business.
