Originally from Nîmes in the south of France, Spagnolo began his career in London at Pollen Street Social before joining Grégory Marchand’s Frenchie in Covent Garden.
He later worked at Casa Fofo in Hackney and Crispin in Spitalfields, alongside a series of residencies and collaborations in London and France, before most recently leading the kitchen at Bar Crispin in Soho.
Spagnolo replaces Frank Guest and will bring a style shaped by London’s restaurant scene, with a particular focus on seafood, spice and produce-led cooking.
Spencer and Sims said his appointment marks an exciting new chapter for their Broadway Market restaurant, continuing its focus on “generous hospitality, relaxed service and confident, flavour-led menus”.
Sune opened in 2023, founded by Spencer, Sims and business partner Spencer Large.
The restaurant - which takes its name from an old Nordic word for ‘son’ - draws on more than 35 years of combined industry experience, pairing thoughtful cooking and service with the warmth and ease of a neighbourhood restaurant.
Sims’ experience at Noma, Lyle’s, Mãos and Brawn informs Sune’s relaxed but considered approach to hospitality, while Spencer’s natural-leaning wine list reflects years of travel, consultancy and buying roles at restaurants including Osip, Akoko and Studio Paskin.
Sune has appeared on Restaurant’s list of the top 100 restaurants in the UK.
