The restaurant, located near Machynlleth in Wales, recorded the top hygiene rating having previously received a one-star food hygiene rating from inspectors, who reported founding flies and broken equipment at the venue.
Ynyshir, a former Best Restaurant in the UK, serves a multi-course menu that comprises raw dishes, and Ward had previously accused inspectors of not understanding its procedures.
On awarding it a top hygiene rating again, the council said it found the “business had addressed all matters identified during the original inspection”.
The restaurant with room’s hygienic food handling was recorded as being ‘very good’ while the cleanliness and condition of facilities and building, and management of food safety were both deemed to be ‘good’.
“This outcome demonstrates the effectiveness of the food hygiene inspection process and the positive results that can be achieved through constructive engagement between regulatory officers and food businesses to improve standards,” the council says.
In response to the one-star hygiene rating that was revealed at the start of the year, Ward took to social media to show inside his kitchens, prep and storage areas and said he had faced ‘persistent challenges’ with Ceredigion council’s environmental health department.
A restaurant spokesperson at the time said that Ynyshir’s cooking techniques and processes were heavily influenced by Japanese ingredients and methods and that it involved specialised preparation and handling practices that differed from conventional kitchen operations.
“We operate at the highest professional level and are proud to work with some of the finest suppliers and ingredients from across the globe,” they said.
