The team behind Trèsind Mayfair has launched Tryst, a new subterranean bar beneath the restaurant with a drinks menu inspired by the regional flavours and ingredients of India.

Described as a ‘modern speakeasy’, Tryst is led by Marina Juszczyk, formerly head bartender at SOMA, the sister bar to Indian restaurant group Kricket.

The opening menu, titled Volume One, takes guests on a journey across India, drawing on ingredients and culinary traditions from regions including the Konkan coast, Rajasthan and Bengal.

Drinks include the Ratnagiri, which combines Alphonso mango, basil and milk with Takamaka Extra Noir and White rums and Cocchi Americano. Clarified Alphonso mango acid is carbonated to create a soda, with the drink finished with Champagne foam.

The Bikaner combines aamchoor with Johnnie Walker Blue Label, Cognac, Amaro Montenegro, peppercorn, kumquat and buttermilk, while the Konkan pairs kokum and toasted coconut with Chopin vodka, chaat masala, apricot and fino sherry.

Trèsind Mayfair opened in May at 13–14 Hanover Street, close to Oxford Circus.

It is the London restaurant from the team behind Dubai’s Trèsind Studio, which became the world’s first Indian restaurant to be awarded three Michelin stars earlier this year.

Trèsind Mayfair serves a modern interpretation of Indian cuisine, offering an evening tasting menu alongside a more accessible lunch menu.

The restaurant marked the London debut of Passion F&B, the hospitality group founded by Bhupender Nath.

Passion F&B operates a portfolio of restaurant and hospitality concepts that also includes Carnival by Trèsind, Avatara, Maison de Curry, Bistro Aamara, A Cappella, Nonnaverse, Viva La Goa and Gala by Trèsind.
