Billed as “an exquisite celebration of wild seafood”, Les Saveurs de la Mer will ‘evolve with the seasons’.
The current four-course menu features Orkney scallop with datterini tomato and basil; native lobster with spiced carrot purée and verbena; and wild sea bass with saffron and Menton lemon.
It concludes with a coconut mousseline served with compressed pineapple and white rum.
Priced at £150 per person, the menu must be booked at least 48 hours in advance and ordered by the entire table.
An additional £58 per person entertainment charge applies on Friday and Saturday evenings when live music and dancing are offered.
Executive chef John Williams MBE says: “With the warmth of this exceptional summer inspiring us, my thoughts naturally turned to the sea. There is something unmistakably refreshing about seafood at this time of year – light, vibrant and full of delicate yet expressive flavours that perfectly capture the spirit of the season.
“For the first time, I wanted to dedicate an entire menu exclusively to the treasures of the ocean.
“This menu is an invitation to enjoy seafood in its finest form – elegant, balanced and deeply connected to nature. Whether through delicate raw preparations, expertly cooked fish or vibrant coastal flavours, every course reflects my passion for creating dishes that are both refined and comforting.”
The two-Michelin-starred restaurant is currently operating from The Ritz’s new Arlington Street Wing while its historic main dining room is restored.
Known for its theatrical tableside service, The Ritz was named the UK’s best restaurant at the 2025 National Restaurant Awards.
