Noble Inns, operator of The Princess of Shoreditch, will open a second Bistro Sablé on the pub’s first floor in October for a limited-time residency.

The 32-seat French bistro will run until the end of the year and will have a dedicated entrance and its own spiral staircase leading from the street to the first floor.

The menu will focus on traditional French cuisine, with dishes including rotisserie chicken, vin jaune and girolles; and cassoulet au confit de canard. Downstairs, The Princess of Shoreditch will serve a pared-back blackboard menu of Bistro Sablé-inspired dishes, alongside its drinks offering.

The dining room will feature oversized posters sourced from flea markets in Paris, alongside Parisian-style lighting and wooden tables and chairs.

Noble Inns opened the first Bistro Sablé on Canonbury Road in Islington last year. The group also operates The Albion and Pig & Butcher in Islington.
