Who has had the biggest influence on your approach to business?
On the hospitality and human relations side of business, it would be my old boss Will Guidara. For the numbers and growth strategy side, my current CEO, Markus Thesleff. That man has no off switch.
How do you stay motivated?
As long as I am contributing meaningfully to the success of the business, or learning new skills, I stay motivated.
How often do you check your email?
All day, every day, excluding Saturdays and Sundays - I never check my email on my days off.
How do you relax?
Spending time taking care of my garden.
What was your dream job growing up?
Wine Director for a luxury hotel group, or a ski bum.

It’s cool to care.

Small plate concepts are terrible - I’m tired of sharing my food.
Do you have any business regrets?
Seven years ago I was offered the APAC Beverage Director role for all of Marriott Group, overseeing 30 brands and over 1,000 hotels. I said no because the money wasn’t right. I should have seen it as an investment in time instead of a payday.
