Founded by Naples-born Andrea Asciuti, who is also the founder of Neapolitan pizza brand 081 Pizzeria, the new site will open at the former Gourmet Burger Kitchen site on Gardner Street in Brighton’s North Laine.
Connie’s has signed a 15-year lease on the site, which will have 130 covers across indoor and outdoor seating. The opening comes less than a year after the brand opened its debut restaurant in Peckham.
The concept specialises in ‘proper thin, crispy pizza’ inspired by New York-style pizza, using Italian techniques and locally sourced British ingredients. The Brighton restaurant will serve the original Peckham menu alongside an exclusive pizza featuring clams, mozzarella, pecorino, garlic, olive oil, peperoncino and parsley. Other pizzas will include Vodka Sauce; Double Pepperoni & Honey; Nduja e Stracciatella; and Funghi, alongside sides, drinks and desserts.

“Connie’s has had a strong start in Peckham, especially over summer, and this opening gives us the chance to bring proper crispy pizza to a new audience beyond London.
